Light Summer Dinner Recipes

The summer is probably one of the most enjoyable times of the year and it is when most people tend to get together in order to enjoy a little bit of time with each other and to share a meal.  If you are trying to watch your weight, it might be a good idea for you to consider some of the light summer dinner recipes that are available.  Not only will these help you to be able to maintain your figure, eating light can help you to keep from feeling lethargic and to enjoy your company a little more.

You would probably be surprised with the number of different light summer dinner recipes that are available for you.  Some of these can be made rather quickly while others are going to require a little bit more finesse whenever you are cooking them.  It might also be possible that you don’t need to cook your food at all as some of these dinner recipes may be raw food which can be some of the most refreshing meals of all.  Here are a few of my favorite light summer dinner recipes for you to choose from.

One of my favorite recipes that I like to make whenever it is warm outside is a dish that combines pasta, along with broccoli and summer sausage.  It is a very easy meal to make and it can feed quite a few people, especially if you double the recipe ingredients.  You start out with 16 ounces of pasta, either a bow tie or ziti.  While this is cooking, cut up a large summer sausage and brown it in a large skillet.  Just before it is finished browning, add a quart of cut cherry tomatoes.  Cover and allow this to stay warm for 15 minutes.  Just before the ziti is done, add some broccoli tops and allow to cook for an additional five minutes.  Drain, saving 1 cup of the water from the pasta.  Mix the pasta mixture together with the summer sausage and tomatoes in a large pot along with half a cup of Parmesan cheese.  Mix thoroughly and enjoy.

Another one of the light summer dinner recipes that I enjoy making is an all raw food dish that almost anybody can enjoy.  I begin by slicing a few red peppers into long strips and then season it with an all-natural salt substitute.  I also make some fresh salsa out of cut tomatoes, red pepper, onion, basil leaves and lemon juice.  Half of the salsa gets mixed with fresh avocado in order to make my own guacamole.  I serve this with flax crackers that were dehydrated the night before.  Finally, I serve it with a mixture of cut grapes, diced celery, toasted almonds and raw Green Goddess dressing.

Neither of these dishes has ever failed to satisfy and they make some of the best light summer dinner recipes that are available.  They are perfect for any crowd and can be enjoyed over light conversation perfectly.

Summer time tends to be that time of the year when many of us get together with family and friends in order to enjoy a meal and to spend some time together.  It does not need to be that time of year, however, whenever we put on weight as a result of this and there are some fantastic low calorie summer recipes which can not only fill the void, they can actually be quite palatable.

The most important part about choosing low calorie summer recipes is that you should choose foods which take advantage of the fact that it is the growing season.  There are so many fantastic fruits and vegetables to choose from but often times, we tend to stick with the same ones and may be missing out on some excellent recipe choices as a result.  Here are some of my favorite low calorie summer recipes that can either be eaten at home or shared with family and friends whenever you are out on a picnic.

One of the most popular food items that goes along with a picnic is fried chicken.  Although it can be quite delicious, it certainly is not something that would be considered to be low calorie diet any standards.  Chicken, on the other hand, can be an excellent low calorie food if it is prepared properly.  Why not grill up some chicken breast ahead of time and season them heavily with Tony’s or some other kind of low-calorie seasoning.  Along with that, you could grill up some vegetables or perhaps even some grilled pineapple, which is always a crowd pleaser.  This not only makes a filling meal, it is one of the better low-calorie summer recipes that you have to choose from.

Another excellent choice for a recipe that you make during the summer is the smoothie.  Many people enjoy having smoothies regularly, but if you have never tried one with leafy green vegetables, you really are missing out on one of life’s greater pleasures.  This is known as a green smoothie and it is an excellent conversation piece, along with being one of the more refreshing low calorie summer recipes that are available.  Simply choose two types of fruit and mix it with water and some leafy green vegetables, such as Romain lettuce or kale.  Blend in well with the ice and you will have a delicious treat that is also extremely nutritious.

Deserts tend to be an area where we might splurge a little bit as far as our calories are concerned, but there are a number of different low calorie summer recipes that can satisfy your sweet tooth without ruining your diet.  Even just a simple bowl of strawberries with some agave nectar makes an excellent treat.  You can also get a bit more creative and create a fruit basket that has been cut into interesting shapes.  Eating a desert like this is not only going to save you on calories, it will also make you healthier overall.
