Light Summer Dinner Recipes

The summer is probably one of the most enjoyable times of the year and it is when most people tend to get together in order to enjoy a little bit of time with each other and to share a meal.  If you are trying to watch your weight, it might be a good idea for you to consider some of the light summer dinner recipes that are available.  Not only will these help you to be able to maintain your figure, eating light can help you to keep from feeling lethargic and to enjoy your company a little more.

You would probably be surprised with the number of different light summer dinner recipes that are available for you.  Some of these can be made rather quickly while others are going to require a little bit more finesse whenever you are cooking them.  It might also be possible that you don’t need to cook your food at all as some of these dinner recipes may be raw food which can be some of the most refreshing meals of all.  Here are a few of my favorite light summer dinner recipes for you to choose from.

One of my favorite recipes that I like to make whenever it is warm outside is a dish that combines pasta, along with broccoli and summer sausage.  It is a very easy meal to make and it can feed quite a few people, especially if you double the recipe ingredients.  You start out with 16 ounces of pasta, either a bow tie or ziti.  While this is cooking, cut up a large summer sausage and brown it in a large skillet.  Just before it is finished browning, add a quart of cut cherry tomatoes.  Cover and allow this to stay warm for 15 minutes.  Just before the ziti is done, add some broccoli tops and allow to cook for an additional five minutes.  Drain, saving 1 cup of the water from the pasta.  Mix the pasta mixture together with the summer sausage and tomatoes in a large pot along with half a cup of Parmesan cheese.  Mix thoroughly and enjoy.

Another one of the light summer dinner recipes that I enjoy making is an all raw food dish that almost anybody can enjoy.  I begin by slicing a few red peppers into long strips and then season it with an all-natural salt substitute.  I also make some fresh salsa out of cut tomatoes, red pepper, onion, basil leaves and lemon juice.  Half of the salsa gets mixed with fresh avocado in order to make my own guacamole.  I serve this with flax crackers that were dehydrated the night before.  Finally, I serve it with a mixture of cut grapes, diced celery, toasted almonds and raw Green Goddess dressing.

Neither of these dishes has ever failed to satisfy and they make some of the best light summer dinner recipes that are available.  They are perfect for any crowd and can be enjoyed over light conversation perfectly.
